About Us
Our journey began with a small restaurant called Gentlemen Noodle.
“Gentle” reflects our belief in food that is kind to the body — nourishing, balanced, and made with care. We choose natural, minimally processed ingredients, avoid unnecessary additives, and prepare everything the way we would at home: honest and from scratch.
“Men” means noodle in Japanese — the heart of ramen.
Our broth is slowly crafted over 36 hours using dried fish, kombu, shiitake mushrooms, and vegetables, allowing deep umami to develop naturally. We also take pride in our vegetarian ramen, made with kombu, beans, house-dried mushrooms, and seasonal produce — light, satisfying, and free from animal fats.
Our ramen is not about excess.
It is about balance, comfort, and respect for ingredients.
