

Our Story
In September 2020, Masa and Koji opened a pop-up ramen restaurant called Gentlemen Noodle at Coorabell Hall,
a historic community hall in the beautiful hinterland of Byron Bay,
about 10km from town.
At first, we wondered if people would travel that far just for ramen. But from the very first day, the response was incredible.
Opening once a week, we quickly became known for long queues and sold-out soup every night. With the support of local residents, Japanese friends, and collaborations with local artists and food vendors, Gentlemen Noodle became
a special gathering place for the community.
In 2021, COVID lockdowns forced us to shift to takeaway service
for our loyal local supporters.
Although we continued operating for several years,
we eventually left Coorabell Hall in 2024
and closed Gentlemen Noodle in 2025.
Even after closing, many people continued
to ask when we would open again.
Now, in 2026, our journey continues in Brisbane
with Pompoko Ramen & Bar,
operated by Gentlemen Noodle Brisbane Pty Ltd.
